Gilding has played ten games for Worcester Warriors in the past two seasons and also worked at Moseley under the coaching guidance of former Scotland openside flanker Ian Smith.
Edinburgh's head coach, Rob Moffat, said: "Jack is a young tight-head prop who we believe has the necessary attributes and determination to make a significant contribution to the development of our pack.
"We have strong competition for starting places at prop with our internationalists Allan Jacobsen, Geoff Cross and Kyle Traynor all competing hard alongside David Young and, our new recruit from the National Academy, Lewis Niven.
"Jack will add to that rivalry and that's a good thing for the club."
Gilding said: "I'm really excited about a new challenge and looking forward to seizing an opportunity. My goal is to give my best and play first team rugby for Edinburgh and I certainly have longer-term ambitions to play tight-head for Scotland."
